THAWING
Perfection Takes Time - and it’s worth the wait.
The legend of Fuego Diablo® is one that never rushes. It reveals itself at the perfect moment: the raise, the return home, the reward. All these moments are never scheduled, which is why we use our “fresh” freeze method to ensure every steak you purchase will last up to three years in your freezer. That way, when the moment arrives and it's time to enjoy your Fuego Diablo® steak, all you need to do is thaw it.
We ask that you respect the cut.
Please follow these steps to thaw your steak properly:
Fuego Diablo® products should always be thawed on a dish in the refrigerator in the vacuum-sealed package unless otherwise directed. This is the safest way to thaw food. The product to retain all of its natural juices, which are essential for exceptional flavor. Never thaw products at room temperature or under hot water. Smaller items such as steaks thaw within 24 hours in the refrigerator. Larger products, such as roasts may take 48-60 hours to fully thaw in the refrigerator. A general guideline is 5-6 hours per pound. Thawed steaks may be refrozen as long as they have remained refrigerated and have not been thawed longer than one day.
NOTE Sometimes you get caught up in the moment. And sometimes the moment just happens spontaneously. When you find yourself short on time to follow the complete thawing ritual, you can quick thaw your Fuego Diablo steaks in a sink of cold water for 90 minutes. Simply immerse the vacuum sealed package and await the perfection. But remember, this is the exception to the rule. For the most exceptional results, follow the ritual like it's a religion.

GRILLING CHART
Pre-heat your Gas or Charcoal Grill: Sear over high heat EACH SIDE for 1 minute with lid closed. Then transfer steak to indirect heat OR reduce heat to low. Close lid and cook according to the times and temperatures below. Steaks will continue to rise in temperature 5 to 10 degrees while at rest after grilling.
GRILLING TIMES
Times are organized by thickness and temperature for easy grilling. Grill times are suggested guidelines only, actual times may vary depending upon your grill type and temperature.

Always let steaks rest 5 minutes before slicing.
